Yunnan cuisine (China) is famous for its harmonious blend of natural flavours, fresh ingredients and the influence of the region’s many ethnic minorities. If you are planning to explore this colourful land, do not miss the following signature dishes — they are not only delicious, they are a genuine cultural experience!


1. Crossing-the-Bridge Rice Noodles (过桥米线, Guòqiáo Mǐxiàn)

One of Yunnan’s emblematic dishes. The rice noodles are served separately, alongside a piping-hot broth in a heat-retaining stone bowl; you add the raw meat, the vegetables and the noodles one after another — delicious, and a pleasure to watch.

What makes it special : eating it is a small culinary ritual in itself.


2. Xuanwei ham (宣威火腿, Xuānwēi Huǒtuǐ)

A ham salted and cured for several years, with a deep savoury taste and a natural, rich aroma. It is usually used in soups or stir-fries.

What makes it special : often called “the jamón of China” — refined and luxurious.


3. Steam-pot chicken (汽锅鸡, Qìguō Jī)

The chicken is steamed in a special clay pot with no water at all — only herbs and natural heat. The result is a clear, delicate broth with a remarkably deep flavour.

4. Dai-style hot and sour fish (傣味酸辣鱼, Dǎiwèi Suānlà Yú)

A dish that bears the strong imprint of the Dai people, using lemongrass, kaffir lime leaves and chilli to create an explosive sour–spicy–fragrant balance.

What makes it special : a hint of the tropics in every tender, sweet mouthful of fish.


5. Rubing (乳饼, Rǔbǐng) — goat’s cheese

A firm cheese made from goat’s milk, usually pan-fried until golden or served with honey.

What makes it special : a uniquely local cheese, found only among the Bai people of Yunnan.


6. Wild mushroom hotpot (野生菌火锅, Yěshēng Jùn Huǒguō)

Yunnan is the “kingdom of mushrooms”, with dozens of seasonal varieties such as matsutake and pine mushrooms…

What makes it special : a deep, natural umami flavour — and some varieties can even be mildly hallucinogenic if you eat too much! 😄 (do ask before tucking in)


7. Er Kuai rice cakes (饵块, Ěr Kuài)

8. Rose petal cakes (鲜花饼, Xiānhuā Bǐng)
